Guacamole is great as a dip for chips, sauce for quesadillas, on pizza, with buffalo wings, etc. When I was growing up in California, it seems like everyone knows how to make guacamole and you can buy it at supermarkets for dirt cheap prices. Much harder here in Hong Kong so you pretty much have to make your own. But just keep in mind that if you are using recipes off the internet and you are in Hong Kong, get extra avocados cause the avocados here are smaller and often times, not very good quality…
Ingredients:
- 3 ripe avocados (black skinned, a little soft to touch – don’t squish all the avocados in the supermarket, they won’t be too happy with you)
- 1 small onion, minced
- 1 clove garlic, minced
- 1 serrano chili, seeds removed, minced
- ½ ripe tomato, seeds removed, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ tablespoon fresh lime juice (from one lime or half a lemon)
Directions:
- Chill avocado and tomato in refrigerator for several hours beforehand.
- Cut up tomatoes and set aside on a strainer. Use paper towel to absorb excess juice.
- Peel and mash avocados in a serving bowl with a fork.
- Stir in onion, garlic, chili, and lime juice. The lime juice will help keep the guacamole from turning black.
- Add salt and pepper to taste.
- Chill for half an hour.
- Add tomatoes before serving.
But if you are lazy like I am most of the time. Just get a pack of mix at the nice supermarkets and 3 avocados.
Lazy Man's Guacamole
Ingredients:
- 3 Avocados
- 1 packet of mix
Directions:
- Chill avocados in refrigerator or ice water.
- Peel avocado, remove seed and mash with fork.
- Add mix and stir.
